This is one of my favorite meals to make and eat. I love that you can add whatever taco toppings that you’re in the mood for. Sometimes I add Black olives or salsa.
1 7oz bag of nacho Doritos crushed
1 lb Ground beef, browned
1 pkg. taco seasoning mixed according to directions
1 8oz. pkg. shredded cheddar cheese
1 8oz. pkg. shredded Mozzarella cheese
Layer ingredients in 9 X 13 pan as listed, crushed chips, meat and seasoning, 2/3 of cheese, lettuce, tomato and remaining cheese.
Bake 350 for 15 minutes
This is one of my favorite recipes for cold days. It’s one meal that everyone in the house usually at least has one bowl of. I hope you enjoy it as much as we have.
1 small can of carrots
1 1/2 Cups water
1 tsp salt
2 1/2 Cups milk
3 tbsp melted butter
3tbsp all purpose flour
salt and pepper to taste
garlic salt to taste
2 Cups shredded cheese
pre cooked bacon
In a large pot over medium heat; combine potatoes, carrots, water, and salt. Bring to boil, then reduce heat, cover and simmer until potatoes are tender. About 15- 20 minutes. Once tender, stir in milk and meat.
In a small bowl combine melted butter, flour, garlic, salt, pepper. Stir into soup and increase heat to medium. Add cheese and keep stirring until thick and bubbly. Let stand 5- 10 minutes.
6 Cups chicken broth
1lb Smoked sausage
2 or 3 chopped carrots
4 or 5 medium sized potatoes
1 head of cabbage
1 large onion
salt,pepper and other preferred seasonings to taste.
In a dutch oven or large pan. Cook sausage and onion over medium heat until sausage is brown and onion is translucent. Add Cabbage, potatoes, carrots, and seasonings. Cover and cook for about 35 minutes or until vegetables and potatoes are tender.
As I’m sitting here trying to write this I have a three-year-old watching Spongebob on tv and I have a headset on with That 70’s Show playing. It’s 9:30 on Sunday morning. I woke up at 5 and actually managed to have some alone time before everyone else gets up and taking turns for the bathroom start. If I was smart I would have used that time to write this. But, I didn’t really have anything to write about yet. It’s Sunday so I made breakfast for everyone. Pancakes, Sausage, bacon, eggs, and hash browns. Usually, everyone eats but today it was only me and the three-year-old that ate. I made enough for everyone. I’m staying positive about this because I can freeze this stuff and use it for breakfasts throughout the week that I only have to heat in the microwave.
I know that I promised recipes but this time I’m giving you a tip. ALWAYS FREEZE LEFTOVER BREAKFAST. Then use them as microwavable breakfast during the week. Then, they can have a hot meal before school and you don’t need to cook. I don’t know about you but my favorite mornings are the easy ones where I stand in the kitchen drinking coffee while everyone gets themselves ready. It’s a bonus if I don’t have to yell.
STEPS TO FREEZING BREAKFAST LEFTOVERS:
1)Let food cool
2)Wrap individually in plastic wrap
3)Place in plastic freezer bag
4)Place in freezer

It was only me and my two sons. Then my boyfriend and I decided it would be a good idea for all of us to live together. BIG MOVE!!! So like I said, I was used to only cooking meals for three. Then all of a sudden I had to get used to cooking for six.
My two are three and eight years old. They only want to eat little kid foods. His kids are 15 and 16 and don’t like a lot of things. I had to revise what recipes that I had to make everyone happy. It’s not easy when the grownups love onions and tomatoes etc.. and half the kids do not. I hear a lot of eww what’s this on the days that I make whatever I like. It’s cheaper to buy groceries and make meals at home than it is to order pizza (which would make all the kids happy).
It seems like everyone is never hungry at the same time. So, I eat at the table with my two kids and everyone else eats where and whenever they get hungry. Some of our favorite regular meals are tater tot casserole, tacos, spaghetti, Italian chicken wraps, buffalo chicken dip, cheeseburgers and fries, and many more which I will eventually be sharing here. Just in case you haven’t figured it out yet this is going to be about cooking dinner for six people. I know that I had a hard time getting used to it and some others might also. I will be posting recipes that I use and a nice story about a big blended family along with it.
